A little time and effort goes a long way when you make your own crackers. Oh, sure, you can buy them in a box, but your family and friends will enjoy them even more when they know they are handmade. Use a good-quality cheddar here; the smoky paprika adds a kick of flavor.
In the bowl of a stand mixer fitted with the paddle attachment (or in a medium bowl, using a handheld mixer), combine the cheese, butter, paprika, fine sea salt, cayenne, and balsamic vinegar and mix on low speed until the ingredients come together. Increase the speed to medium-high and mix until smooth and well blended, 4 to 5 minutes.
Turn the mixer back to low and add the flour in th
