• 12 thick slices bacon
• 3 tablespoons bacon-infused bourbon or plain bourbon
• ¼ cup (55 g) packed light brown sugar

Preheat the oven to 400°F (205°C). Line a rimmed sheet pan with a Silpat or aluminum foil.

Lay the bacon strips on the prepared sheet pan. Brush each slice of bacon with bourbon and sprinkle with brown sugar on both sides. Bake for 13 to 15 minutes, until the bacon starts to caramelize and becomes crispy. Remove from the oven and let cool completely. Coarsely chop to use in brittle or cookies (or leave in strips to eat on its own). The bacon can be prepared up to 3 days ahead, stored between sheets of waxed paper in a zip-top bag in the refrigerator. Let stand at room temperature for 30 minutes before serving.
