Because of its relatively high sugar content, Sweet Pastry Dough can become soft and sticky if excessively handled. Follow the instructions for using the chilled dough until you feel confident enough to try rolling freshly prepared dough. Whether working with chilled or fresh dough, try the alternative method for rolling the dough directly on the tart tin base (step 6) to simplify transferring the dough to the tin.
