Called conchas or shells, because of the traditional pattern pressed into the topping with a round tool like a biscuit cutter, these are not only delicious but also quite slick looking. The topping recipe is meant to be divided in half so that you can make half vanilla and half chocolate-topped buns. For all vanilla, omit the cocoa; for all chocolate double it.
