This is fresh tasting and easy to make — just pound away and you’ll have a perfect dipping sauce for many of the following recipes. It’s great tossed with some steamed seafood and it also makes a nice fiery dressing. The seeds are in, so make sure you taste this to get a good balance between hot, sweet and sour. By all means, if you like it really killer hot, add some wild green chillies as well.
Pound the chillies and the garlic in a mortar with a pestle until you have a paste. Stir in the vinegar, sugar and the salt, then taste and adjust the seasoning if necessary.
