For this first chapter, I have chosen recipes that demonstrate some of the basic techniques of Asian cooking. Try them out to see how simple it is to stir-fry, steam and braise. If you are wary of cooking in this style, then I’m confident that making the dishes in this chapter will set you up to master the other recipes in the book. As long as you remember to follow the few instructions at the beginning and to taste for balance, you’ll quickly build confidence along the way and soon be set to embark on the marvellous world journey of Asian flavours.
