Here is a delightful, almost delicate pie. The dough needs to be very thin and cooked quickly. A bit of advice to make this come out well: roll the dough out with a heavy rolling pin, dusting with flour. Then place the dough on your knuckles and gently stretch it. This is the technique for filo dough and other doughs that need to be very thin.
