It’s great how something as healthful as kale can become an addictive snack by coating the leaves with oil and baking them. I like to add curry powder and malt vinegar for extra flavor, but the chips are good plain, too. Collard greens can be substituted.

Preheat the oven to 300°F (150°C). Line 2 baking sheets with parchment paper or silicone baking mats. Tear each kale leaf away from its central rib and stem, keeping the leaves in the largest pieces possible. Wash the leaves in several changes of cold water, spin dry in a salad spinner
