This crispy snack was inspired by a trip to thailand, where I was drawn to the incredible aromas of a vendor frying peanuts, chiles, and kaffir lime leaves. This recipe is endlessly adaptable: soy nuts, cashews, and almonds all taste great with this zesty treatment.

Method

Place the soybeans in a large bowl and add cold water to cover by 3 inches (7.5 cm). Let soak overnight. Drain the beans, rinse well, and pat them dry with paper towels.
