Street sellers all over Gujarat sell these lovely spicy pastries, each with their own unique recipes depending on the town. Traditionally they are made with gram flour and fried rather than baked. Some aunties make them sweeter by adding more sugar or jaggery, others add poppy seeds and omit the fennel. Use this recipe as a base and experiment to find the combination you like the most.
