My girls love burfi. Whenever we go to weddings or religious functions I seek out the penda and they seek out the burfi. They also love millionaire’s shortbread so we came up with this recipe that covers both.
Grease and line your tin with greaseproof paper. Put the ghee in a pan and when it has just melted add the milk. Gently whisk together so they are well combined. Add the milk powder, set a timer for five minutes and stir, stir, stir and mash, mash, mash! This process cooks out the milk powder. Don’t worry if the ghee and milk solids separate; keep stirring and mashing for the full five minutes.
