Rainforest Refresher

I’m taking you to India by way of Mexico here with a tropical street salad with a twist. This unusual salad makes a perfect dessert for those who don’t like things that are too sugary (like me). After a meal, serving a simple plate of fresh fruit is not uncommon in India, and in Northern India it will often be sprinkled with a more unusual ingredient – black salt, or kala namak. Something of an acquired taste, it is a pungent kiln-fired rock salt with a fermented flavour. You can lea
