Fresh beetroot makes a delicious soup, is good in salads and can be cooked simply to serve as an accompaniment is an easy vegetable to cook, although a bit messy to peel. If you can’t get a hold fresh horseradish, then the grated horseradish sold in jars works well.

Ingredients

  • 1 kg ( lb) small beetroot
  • 1–2 tbsp olive oil<

Method

  1. Cook the beetroot in their skins in a pan of boiling salted water for about 1 hour or until they are tender to the point of a knife. Drain in a colander and leave to cool. Preheat the oven to 200°C (fan oven 180°C), gas mark 6.
