Chops are a nice, easy way to cook venison. Perhaps surprisingly, since it’s a pretty economical way to prepare a large saddle, chops are not a standard venison cut, so you may well need to order some from your butcher or game dealer.


  • 4 large red onions
  • a couple of good knobs of butter
  • 1 tablespoon <


Preheat the oven to 200°C/gas 6. Place the whole red onions on a baking tray and bake for about an hour or so, or until soft. Leave to cool for
