These can be served as an accompaniment to most meat and fish dishes, or even as a part of a buffet. Don’t discard the outer stalks - use them to make a soup or flavour a casserole.


  • 2 celery heads (with leaves)
  • salt and freshly ground black pepper
  • about 500 ml


Preheat the oven to 190°C/gas 5. Remove the outer stalks from the celery and save the leaves for the sauce.

Put the celery hearts into an ovenproof dish, season with salt and pepper and pour over the vegetable stock. Cover with a lid or foil and
