Two simple earthy ingredients - potatoes and wild mushrooms - come together to make a perfect dinner party starter. The secret here is to be very generous with the butter in the whipped potatoes so they almost become sauce-like, and of course you don’t need very much of them. Chanterelles look particularly attractive, but you can use ceps, hedgehog fungus or girolles - whatever you can lay your hands on.
