Champ is the name of mashed potatoes as eaten in Scotland; they are often mixed with other vegetables such as spring onions or even mashed beetroot when they acquire different regional names. If you add mashed turnips, you have clap shot, if puréed cooked greens or cabbage and cream, your champ is called Kailkenny.
