Crunchy on the outside then warm, gooey and aromatic in the middle and soaked in a mellow palm sugar syrup, this is the perfect hangover cure. A lot of effort goes into making this dish, but my god is it worth it. Plan ahead and get the custard, bacon floss and syrup ready the night before so it’s really just an assembly job in the morning. Palm sugar comes either in granulated form or in a slab. If you get it in a slab, just shave it with a knife.
