Preserving lemons is a great way to capture the unique taste of lemon. Used correctly they add a citrusy depth to your cooking. They’re great for adding to stews, roasts and sauces like harissa, and we also add them to our baba ganoush.

Ingredients

  • 10 lemons
  • 110 ml olive oil
  • 150 g coarse sea salt

Method

Rinse the lemons under hot water to clean them. Cut the lemons into quarters from top to bottom, leaving one end still connected. Put them in a large bowl.

Mix the olive oil, salt, peppercorns and bay leaves together and rub all over the lemons, stuffing some inside as well as rubbing it into the skin. Pack the salted lemons into your Kilner jar and sprinkle any remaining salt mixture o
