Pickling is a great way to salvage any vegetables you haven’t had time to use that are clogging up valuable fridge space. By preserving fresh ingredients, you are giving them extra shelf life and reducing waste.
It’s super easy to pickle vegetables and then you have them on hand to perk up a dish like Smoky Aubergine and Labneh on a Pita. A salt beef bagel just wouldn’t be the same without some pickled cucumber!</
