Fragrant sugar syrups are used a lot in the Eastern Mediterranean, Middle East and North Africa. They are used to preserve fruit (see our Spoon Sweets), to moisten and flavour cakes like Portokalopita and Baklavadakia and to sweeten drinks or cocktails.
