A nice short and strong cocktail which is a play on the classic Sazerak. Instead of brandy we use Metaxa — if you can, use the 7 Star as it adds a boldness. We switch out absinthe for raki, which has a similarly aniseed flavour. A strip of lemon peel brings the whole drink together with a touch of citrusy zest.

Ingredients

  • 1 white sugar cube
  • a few drops of Peychaud’s bitters
  • 5 ml

Method

Take your glass and drop in the sugar cube. Wet the cube with the bitters and add the raki, then crush the cube with the back of the bar spoon or muddler. Add the Metaxa and three ice cubes and stir for quite a while until the sugar has dissolved. Fill the glass with ice, then take the lemon peel and twist it over the drink to release the oils.
