This fresh, gin-based summer cocktail is inspired by the flavours of kumquat and basil, both of which made their way to the Mediterranean via the spice route. The kumquat is now the national fruit of Corfu, and the island is the home of several delicious kumquat liqueurs. They’re not always easy to find here though, so we tend to use Cointreau instead.
