This is a really refreshing herbal cocktail, full of flavour. Mastiha is a Greek spirit from the island of Chios flavoured with the sap from the mastic tree. We pair it with a gin from Greece called Old Sport which also contains mastiha, and a sprig of dill which picks up on all those botanicals and brings a lovely refreshing element to the drink.
