This is a great rustic basic recipe to use with seasonal fruit all year round. For a sweet fruit filling of any sort, I like to start with a layer of almond cream. It’s not obligatory but it’s a great base for most things.

  • 225 g strong bread flour
  • 10 g caster sugar

In a large bowl, mix together the flour, sugar and salt. Add the cold diced butter and rub it into the flour using your fingertips (it doesn’t need to be too fine – you still want to see small pebbles of butter throughout). You can also do this by pulsing everything in a food processor.
