Slightly adapted from the original Cake Stall version.
Cream the butter with the sugar and the orange zest until light and fluffy. Beat in the eggs one at a time. Mix in the flour sifted with the ground cinnamon and stir in the orange juice, raisins and candied peel. Spoon the mixture into the prepared tin and smooth level. Sprinkle the demerara sugar evenly over the top.
