If you are passing by a West Indian market stall, you might try to pick up some tasty callaloo to replace the spinach in this recipe (see The Caribbean Kitchen). It’s the equivalent of spinach in the Caribbean and grows in every yard. Take out the stems, chop off the leaves and add it to the pot with the chickpeas.
