This is a great snack – two bites and you’re done. Have it with a fresh, fruity smoothie and dip them in chilli or hot sauce if you want to whack up the heat. You can make the batter in the morning for the evening if you want, but don’t leave it in the fridge for longer than that.

  • Simply put all the ingredients – except the prawns, spring onions and frying oil – into a food processor and whizz, using the pulse button so that the corn gets chopped rather than puréed. Add the prawns and spring onions and mix everything together.
