Many people in Guyana like hot pepper on their food and also their fruit, and I personally love it, too. I started to eat peppered mangoes back in 2012 when an old friend would leave them on my desk at work. I remember the first time I took a whiff of this simple but pungent salad. It smelled of pepper, garlic, and vinegar, and the plump, firm sweet mangoes were singing in the background. Oh la la, wow! Sweet, salty, acid, and spicy in one bite. As with any salad, if you start with b
