Tomato and Chilli Sauce

Ingredients

  • 1 tablespoon olive oil
  • 50 g/2 oz onion, chopped
  • 1 clove of garlic, chopped
  • 1 × 400 g/14 oz can tomatoes, chopped, and their juice
  • ½ chilli pepper, seeded and chopped
  • 4 large basil leaves, chopped
  • salt

Method

Heat the oil in a pan and sweat the onion and garlic for 5 minutes, without browning. Add the tomatoes, chilli, basil, and salt to taste. Simmer gently for 20 minutes. Pass through a mouli légumes or sieve. Taste and adjust seasonings. Reheat if necessary when needed.
