Lettuce is one of those ingredients that many people think you can only have in salads. I beg to differ and enjoyed a similar dish in Southern Spain when I lived there for 12 years. The garlic dressing just makes the dish here.
Prepare and heat up the barbecue.
While waiting for the barbecue to heat up, make the dressing. Heat the olive oil in a frying pan (skillet) over a medium heat, then remove from the heat and add the remainder of the ingredients. They will infuse in the residual heat. Set aside.
Put the lettuce and the leeks, flat-side down first, on the barbecue and cook on both sides until nice
