This bread is a take on traditional Swedish Christmas buns, but is made in the shape of a babka with saffron and an almond, cinnamon and raisin filling. It’s so good as a breakfast treat or an afternoon snack.

Ingredients

For the Bread

  • 250 ml ( fl oz/1 cup) plant milk (I like oat milk)

Method

Pour the milk into a saucepan, add the saffron and heat gently. Once heated, add the butter and stir to melt.

Remove the pan from the stovetop and leave to cool until the milk mixture is warm but not piping hot. A good way to test for this is to dip your finger in the mixture – it should feel warm but not burning. This is so the fresh yeast will be activated and dissolve well.
