My husband loves mince pies. Actually, he is pretty obsessed with them. So, the fact that he approved of this version is win-win. This is a big mince pie rather than lots of smaller ones, with a frangipane topping to marry it all together.
Chop the dried fruit with a knife before adding to a bowl. Then add all the other mincemeat ingredients and mix thoroughly. Keep in the fridge overnight.
To make the pastry, add all the dry ingredients to a bowl. Chop the butter into small pieces and rub into the flour mix with your hands. Add the milk, a little at a time, and mix well to form a dough. Allow to rest somewhere warm for 1
