  1. Lightly beat the eggs and season with salt and pepper.
  2. Heat an 18 cm (7 in) non-stick frying pan over medium heat. Add the butter and let it melt. Cook just until the butter starts to froth then pour in the egg. Cook for 1 minute until the omelette has set on the bottom of the pan. Add the cheese slice to the centre of the omelette and use a small palette knife
