It’s not a breakfast book without a bagel, right? I won’t give you a recipe for bagels as they are lengthy to make and, to be honest, you can buy good-quality, inexpensive ones these days. You can literally put anything on a bagel, but cream cheese and salmon is a classic combo.

Quick pickled shallots

  • 3 French shallots
  • 75 ml ( fl oz) white-wine vinegar

Method

  1. For the pickled shallots, peel the shallots and slice thinly using a mandoline or sharp knife. Separate the slices and put them in a bowl of boiling water to soak. Leave for 10 minutes before draining.
