Ruby chocolate is the new big thing in chocolate and pastry – it’s been called the fourth chocolate after white, dark and milk. The chocolate is made from unfermented cocoa beans, which are naturally pinkish in colour (it’s the fermentation process that turns the beans brown), and has a slightly sweet, fruity yet sour flavour, which pairs beautifully with fresh berries and yoghurt.
