One of many joys of spending time in Kerala, and indeed Sri Lanka, is the breakfast offering of appam. In Sri Lanka they are referred to as hoppers. These crisp, bowl-shaped rice pancakes are served at breakfast, often with an egg in the centre and some chutney on the side along with some dal or sambar. It really is a wonderful way to start your day. Back in the UK, I tend to make mine for lunch as they are quite substantial. They would also be great for a weekend brunch.
