This curry completely transforms beetroot and has been known to convince those who would normally overlook this nutritious vegetable. Its origin stems from southern India and Sri Lanka, where I was taught to cook it by some locals. The pandan leaf has a unique flavour that really adds to this curry so is worth sourcing. You can find them in Asian grocers or online. Like curry leaves, you can store them in the freezer and cook directly from frozen.
