Being vegetarian would be a breeze in India. There are myriad possibilities when it comes to vegetable dishes. Spices transform even the humblest of vegetables. As more of the world is becoming more vegetarian in their eating habits, I thought it was important to have a large section showcasing some of the vegetarian Indian dishes my family eat regularly. I have largely focused on vegetables that are commonplace in the West and hence readily available here in the UK. Such stalwarts as cabbages, beans and cauliflower really benefit from Indian culinary techniques, most of which are disarmingly simple.
