As a result of having numerous river tributaries flowing through the state of Bengal and out into the Bay of Bengal, Bengalis love fish, particularly freshwater fish. Mustard is celebrated in Bengal and mustard fish curry is a much-loved classic. I tend to make it with filleted salmon, but it also works well with trout or mackerel. In Kolkata, all my relatives love their fish and typically make this curry using freshwater fish such as ilish (hilsa), boal and koi. This is my family’s speedy
