Although Kolkata is not a coastal city, it does lie on the banks of the Hooghly River and has a port. Fish is much loved and eaten throughout the whole of Bengal (which stretches across into Bangladesh) and river fish is particularly prized. I have included some of the recipes that I eat with family in Kolkata in this section but have adapted them with fish that we are more likely to eat in the West. My travels in Kerala have widened my knowledge of the types of fish and shellfish offerings available there too, so they also have a moment to shine in this chapter.
