Kulfi is India’s answer to ice cream, which is both delicious and very simple in that it requires no churning and is ready to eat within a few hours. Its origins stem from the Mughal era when flavours such as pistachio, rose, cardamom, orange and saffron were infused into the creamy cooling kulfi, offering much respite during the hot summer days.
