Spare ribs are popular throughout China. Recipes from the south tend to be less rich than those from the north, where marinades contain considerably more wine. The best way to ensure the ribs are really succulent is to braise them, as deep-fried ribs tend to be dry.


  • 500 g/ lb pork spare ribs, cut into 5 cm/2 in lengths


  1. Combine all the ingredients for the marinade in a large, shallow dish. Add the ribs, making sure they are completely submerged. Cover and marinate for 30 minutes, turning the ribs once or twice.
  2. Transfer the ribs and marinade to a deep pan. Cover with a tightfitting lid and bring to the boil. Cook over high heat for 15 minutes.
