This is a great sauce for Christmas puddings and desserts, flavoured with fresh vanilla and whisky.

Ingredients

  • 600 ml (20 fl oz) milk
  • a large pinch of ground nutmeg<

Method

  1. Place the milk in a pan with the nutmeg. Scrape the seeds from the vanilla pod and add to the milk with the pod. Heat gently until small bubbles appear around the edge of the pan. Set aside to cool, then strain the milk, discard the pod and wipe out the pan.
  2. Melt the butter in the pan over low heat. Sprinkle the flour over the butter and cook, stirring continuo
