This festive rice dish from the Parsee community of western India is an almost mandatory accompaniment to meat curries like Gosht Dhansak and fish dishes like Patra ni Macchi. The gentle brown color is from the caramelized onions.

Ingredients

Method

  1. Set the Instant Pot® on Sauté mode, and heat the oil for 1 to 2 minutes.
  2. Add the onion and gently cook for 3 minutes. When the onion wilts and softens, stir in the brown sugar and cook for 4 to 5 more minutes until the onion is softly caramelized.
  3. Add the cardamom pods, cinnamon stick, bay leaves, cloves, mace, salt, and rice and stir and cook for anothe
