This particular recipe is a hack of a classic Bengali recipe. The traditional recipe requires hours of slow cooking the onions to reach a caramelized golden consistency. Using my Everyday Masala Paste, I developed a quicker variation that will do on short notice. If you wish to substitute sweet potatoes for the potatoes, that works well in this recipe.
