Cooking okra in the Instant Pot® takes a little leap of faith and some encouragement from mom. I have always been reserved about doing anything that resembles steaming where okra is concerned. My mom assured me, however, that all would be well as long as I made sure the okra was prepped and chopped, and that there was no extra water. Saying silent prayers to the okra gods, I developed this recipe that has flavors from Madhya Pradesh, the central heartland of India.
