This combination of fresh sweet carrots and bitter greens is another classic from the North Indian and Punjabi table. Depending on where you live you will either find fresh fenugreek leaves or you will certainly find good quality frozen fenugreek leaves at your Indian grocer. Alternately, you can use fresh kale leaves and some dried fenugreek leaves. The only real effort of time needed in cooking this dish is chopping the carrots.
