I add vegetables, such as carrots and even beets, to my Keema Matar. They not only increase the nutritional value of the dish, but also add a lovely layer of color. While Keema Matar is traditionally prepared with ground lamb, I prefer ground chicken and feel that the spices shine better with this lighter meat. You could also use ground turkey. The seasonings used in this dish vary from region to region and this particular version uses North Indian seasonings.
