Unlike the sherbets, kayyısı suyu is thick and fruity. Made from dried apricots, it has a pulpy texture and is quite filling — a pleasant addition to a summer breakfast.

Ingredients

  • 8 oz/225 g dried apricots
  • ½ pints/900

Method

  • Cover the apricots with enough water to just immerse them, and leave to soak for 3-4 hours. Drain them, push them through a sieve, then add the cold water (or blend them with the water in an electric mixer). Add extra water if you like, and sweeten with honey or sugar to your taste.
